Fermenting hot sauce brings out a beautiful depth of flavor from peppers that you just can’t get any other way.
Let’s get started!

Select and prep your peppers and add-ins. Create a 3% brine for you ferment.

Pour the brine over your pepper mixture and place a fermentation weight on top to ensure that everything remains submerged

Secure your lid and cover setup. Leave to ferment out of sunlight for at least a week, but I find the sweet spot around 2 weeks.

Strain your pepper mixture, reserving the brine, and blend them in a blender. Slowly add reserved brine and vinegar.
