Homemade Breakfast Sausage Recipe

With a simple-to-find cut of pork and a few herbs and spices,  you’ll be on your way to sausage spiced just the way you like it.

This recipe uses ground cloves, crushed red pepper flakes, brown sugar, sage, garlic powder, kosher salt, and thyme.


Making It

Choose your meat, prep and freeze meat and attachments, grind once, mix in seasoning, and grind a finer grind to finish.

I like to freeze some in patties and some in 1-pound portions. Freezing your ground sausage in vacuum-sealed bags is ideal for preservation.



Cook it up in patties or break it up in frittatas, casseroles, grits, scrambled eggs, quiches, burritos, tacos, or gravy.
