Fill your large vessel with the apple scraps, sugar, and water. Use fermentation weights and cover with a breathable covering.

Prepare Ferment

Initial Fermentation

This stage will last about 2 weeks. If you see streams of bubbles inside your jar, it's fermenting!

Use a fine mesh strainer over a bowl to strain your apples out of the liquid. Return the liquid to a clean glass jar with a breathable cloth.

Strain

Second Fermentation

This could take anywhere from 4-12 weeks, after which point you'll bottle it and store it in the fridge.
