Heat the milk in a large pot over medium until it reaches 190 degrees F, add white vinegar, stir to combine, and allow to curdle.

Pour or ladle the contents of the pot into a cheesecloth-lined strainer placed over a bowl (to catch the whey).

Gently mix in any desired flavorings or salt with a fork.

Gather the ends of the cheesecloth and give it a gentle twist to form a ball shape and squeeze out some, but not all additional whey.

Use 2 small plates to form your cheese into a 1-2" thick disk. Chill for an hour before serving.
